Pick manual if your truck doesn’t have an air supply, or if you want one fewer system to maintain. The trade-off is operator workflow: manual means stepping out and disengaging the clutch lever by hand to free-spool cable, where air-spool engages from a cab switch. For wreckers without onboard air, manual is the right answer.
